Simple Slaw Salad

Typical coleslaw is a creamy and calorie packed.  

As delicious as it is it can be heavy and not the best thing to eat a few times a week.  

This Simple Slaw is something I crave and can eat many times a week without waist worry!

To make this even simpler you can pre-make the salad and keep in the fridge for 3-5 days.

I crush an entire bag of cashews too so that they are always ready to go.  

The Avocado + cashews are always best when added fresh.

Simple Slaw Salad:

  • *  1 cup red cabbage shredded (about 1/3 a small cabbage)

  • *  2 peeled carrots grater*

  •  1 cored apple finely chopped

    Time saving secret tip: if you have an awesome blender or food processor that you can use to chop - put each ingredient in separately until they are nicely chopped

Dressing:

  • *  2 tablespoons olive oil

  • *  1 tablespoon Dijon mustard

  • *  1 tablespoon apple-cider vinegar

  • *  1 whole lime, lemon or orange freshly juiced

  • *  Salt and pepper to tasteMix all ingredients together well in a large bowl

  • Mix salad and dressing together and add to a plate


    Top with:

  • *  1/4 cup chopped cashews

  • *  1/2 avocado dicedThis recipe will make 3-4 average size salads
