Not So Greek Salad
I love a good greek salad and I love it more for giving us the idea to add olives to salad.
It really makes it so good!
But a typical greek salad has feta cheese and as I try to live a more vegan lifestyle.
I found a way to make a greek salad that is Vegan but still so delicious.
The trick - add pine nuts and avocados.
Side note: does anyone else think that these two things can be added to 90% of the meals we eat....or is that just me?
This salad is best made right on the spot and is not very good when stored.
If you want to pre-make this salad to travel with then add the avocado and pine nuts after
Not So Greek Salad:
* 1/2 Avocado diced
* 1/2 cup diced cherry tomatoes
* 1/4 cup diced Black olives
* 1/4 cup Pine nuts Optional additions:
* 1/2 cup diced cucumber
* 1/2 cup diced pepper
* Shredded lettuce or spinach
* 1 tablespoon Olive oil
* 1/2 tablespoon Balsamic Vinegar
* Salt and pepper to taste
Mix all ingredients together well in a large bowl
Eat Immediately + Enjoy!
